{"id":95,"date":"2011-11-25T22:12:34","date_gmt":"2011-11-25T21:12:34","guid":{"rendered":"http:\/\/jfm72.fr\/blog\/?p=95"},"modified":"2023-07-28T21:50:59","modified_gmt":"2023-07-28T20:50:59","slug":"brioche","status":"publish","type":"post","link":"https:\/\/jfm72.fr\/blog\/brioche\/","title":{"rendered":"Brioche"},"content":{"rendered":"<p>Voici ma recette:<br \/>\n<span style=\"text-decoration: underline;\">Ingr\u00e9dients<\/span>:<\/p>\n<ul>\n<li>550 g de farine T45 ou T55 (dont 100g pour le levain)<\/li>\n<li>90g de sucre en poudre<\/li>\n<li>1 cuiller\u00e9e \u00e0 caf\u00e9 rase de sel ( 5g )<\/li>\n<li>20-25g de levure de boulanger<\/li>\n<li>4 \u0153ufs (r\u00e9server \u00bd jaune et un peu de blanc pour dorer)<\/li>\n<li>250 \u00e0 300g de mati\u00e8re grasse: 125g de beurre et 125g de <a title=\"Vitaquell\" href=\"https:\/\/www.quechoisir.org\/comparatif-margarines-sante-n241\/vitaquell-omyogas-3-bio-p123458\/#tab-description\" target=\"_blank\" rel=\"noopener noreferrer\">margarine<\/a> \u00a0 (par ex <a href=\"http:\/\/www.vitaquell.fr\/produit\/cuisine-patisserie-avec-aromes-bio\/\" target=\"_blank\" rel=\"noopener noreferrer\">Vitaquell<\/a>)<\/li>\n<\/ul>\n<p><a href=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/15102011078-e1322422611767.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-101\" title=\"Ingredients\" src=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/15102011078-150x150.jpg\" alt=\"Ingredients\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>Tout laisser \u00e0 temp\u00e9rature ambiante 1 h avant de commencer.<\/p>\n<p>Tamiser la farine,<\/p>\n<p>Dans le bol p\u00e9trisseur dissoudre la levure dans 100g\u00a0 d&rsquo;eau ti\u00e8de,\u00a0 ajouter 100g de farine tamis\u00e9e et m\u00e9langer au fouet pour obtenir une p\u00e2te molle.<\/p>\n<p>Recouvrir avec le reste de la farine,<\/p>\n<p>Laisser pousser \u00bc \u00e0 \u00bd heure dans un endroit bien chaud (&gt;22\u00b0), \u00e0 l&rsquo;abri des courants d&rsquo;air froids (par exemple au-dessus d&rsquo;un radiateur, sans que le r\u00e9cipient soit en contact direct avec la chaleur).<\/p>\n<p>Mettre \u00e9galement le beurre\/margarine au chaud<\/p>\n<p>Commencer \u00e0 p\u00e9trir \u00e0 vitesse lente (4 mn ) et ajouter les \u0153ufs puis le m\u00e9lange sucre-sel,<br \/>\net quand le m\u00e9lange est homog\u00e8ne ajouter le beurre\/margarine pommade, passer a vitesse moyenne.<\/p>\n<p>P\u00e9trir 20 mn en arr\u00eatant 30 secondes toutes les 4 minutes. A la fin du p\u00e9trissage, la p\u00e2te est plus lisse et se d\u00e9tache parfaitement des parois du r\u00e9cipient, elle forme une seule masse.<\/p>\n<p><a href=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/15102011080.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-102\" title=\"15102011080\" src=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/15102011080-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>Recouvrir d&rsquo;un torchon et laisser pousser 1 \u00e0 2 h (la masse doit doubler de volume) dans un endroit temp\u00e9r\u00e9.<\/p>\n<p>Rabattre la p\u00e2te ( la p\u00e9trir sans la d\u00e9chirer pour bien \u00e9vacuer l&rsquo;air qui se trouve \u00e0 l&rsquo;int\u00e9rieur ) et mettre au r\u00e9frig\u00e9rateur pour 6 \u00e0 12h<\/p>\n<p>Faire chauffer le four au minimum (50\u00b0, 30 si possible) et l&rsquo;arr\u00eater, y mettre les moules avec chacun 10g de beurre<\/p>\n<p>Rabattre et fa\u00e7onner la p\u00e2te en boules.<\/p>\n<p>Beurrer les moules avec un pinceau (le beurre a \u00e9t\u00e9 liqu\u00e9fi\u00e9)<\/p>\n<p><a href=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/16102011088-e1322422313396.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-103\" title=\"16102011088\" src=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/16102011088-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>Garnir et laisser pousser dans le four \u00e9teint pendant 2h \u00e0 3h<\/p>\n<p>\u00bc d&rsquo;heure avant la fin de la pousse enlever les moules du four ,mettre un bol d&rsquo;eau chaude dans le l\u00e8chefrite et pr\u00e9chauffer \u00e0 thermostat 8 pour un four classique, pour un r\u00e9cent \u00e0 chaleur tournante apr\u00e8s de nombreux tests j&rsquo;utilise le programme eco (!?) en pr\u00e9chauffant \u00e0 220\u00b0\u00a0 .<\/p>\n<p>Dorer les brioches avec le \u00bd jaune d&rsquo;oeuf dilu\u00e9 et enfourner,<\/p>\n<p><a href=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/16102011091.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-105\" title=\"16102011091\" src=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/16102011091-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><br \/>\nFaire cuire \u00e0 thermostat 7 pendant 5 mn puis 25 mn \u00e0 6 (220\u00b0 pendant 5 mn puis 30 mn \u00e0 190\u00b0)<br \/>\nPour un four combin\u00e9 vapeur utiliser le programme pain 25 mn \u00e0 185\u00b0 puis 10 mn four \u00e9teint.<\/p>\n<p><a href=\"https:\/\/jfm72.fr\/blog\/wp-content\/uploads\/2011\/09\/16102011093.jpg\"><img
